1 1/2 cups brown rice
3 Tbsp oil
2 beaten eggs
1 cup cubed ham
1/2 onion
1/2 bag (16 oz) frozen peas and carrots
2 1/2-3 tsp garlic powder
1 Tbsp soy sauce
1 1/2 tsp salt
Prepare 1 1/2 cups rice in a rice cooker or on stove.
Refrigerate until chilled. (You cannot use warm rice to make Ham Fried Rice- it will just get mushy. I usually put the rice in the rice cooker in the morning after breakfast, then when it's done refrigerate until dinner).
Heat oil in high-sided skillet or pan on med-high until hot. Add beaten egg and fry. Add rice and cook for two minutes on high, stirring frequently. Add ham, onion, peas, and carrots. Turn down to medium heat and cook covered, stirring every two minutes, until vegetables are tender. Add garlic powder and soy sauce and adjust to taste.
