Canning at the Haderle's











On Saturday, August 21st, the Relief Society sisters went out to Chalmers to the home of Bob and Mary Haderle for a salsa canning lesson. To begin our lesson, Sister Haderle read the following quote about the purpose of Relief Society taken from the September 2010 Ensign,

"The purpose of Relief Society as established by the Lord is to prepare women for the blessings of eternal life by helping them:

1. Increase faith and personal righteousness
2. Strengthen families and homes
3. Seek out and help those in need."

Sister Haderle then pointed to the photo of Relief Society sisters watching a sister as she prepared and diced vegetables. She reminded us that as we started chopping and dicing that we were fulfilling the purpose of Relief Society! We can learn so much from one another.

Here is her canned salsa recipe and a few tips we learned:

MARY HADERLE'S HOMEMADE SALSA

4 cups peeled, seeded and chopped ROMA tomoatoes

2 cups chopped green peppers

1 cup chopped onion

1 Tablespoon salt

1 teaspoon oregano

2 cups chopped red peppers

3/4 cup cider vinegar

1 Tablespoon sugar

1 teaspoon paprika

Cook for 1 hour or more until partially thickened, stirring occasionally.

Add 1 6-oz size can of tomato paste

1/4 cup chopped cilantro or parsley (You can substitute dried cilantro or parsley, but use about 2 T.)

Cook about 15 minutes more to thicken. Pour into hot jars, place lids and rings and process in boiling water for 30 minutes. Makes about 3 pints. Recipe can be doubled.

Notes:
*This makes a 'sweeter' salsa.
*Remember to scrape the seeds out of the tomatoes so the salsa isn't runny.
*You can use tomato paste to thicken many fresh tomato recipes.
*Sister Haderle recently started using a vegetable chopper similar to this. (Click here.) This made the dicing go SO much faster!
