6-6 1/2 cups of whole wheat flour
1/3 cup gluten (found in baking section)
1/4 tsp vitamin C powder (optional)
2 1/2 Tbsp yeast (not optional)
2 tsp salt
1/3 cup oil
1/3 cup honey
2 1/2 cups water
Put in the 2 1/2 cups very warm water, add oil, honey, salt, vit C, and yeast. Mix up briefly and let sit for 5 minutes. Put mixer on level 2 and add 3 cups flour. Let mix for 2 minutes. Add gluten and 3 more cups of flour.
Let mix for at least 10 minutes. If the dough has not pulled away from the side, then add 1/2 cup more flour and let mix another minute. When it's pulled away from the side of the bowl, then it's done.
Divide the dough in half. Roll dough to get bubbles out, then roll into a form for each bread pan. Let rise in the oven on 200 degrees, with a bowl of boiling water on the rack underneath. After 30 minutes, take out water, turn oven to 350, and bake for 25-30 minutes. Remove bread from pans immediately and lay them on their sides to cool.
